Isola Chianina herd of Chianina cattle is clearly outlined with age, size and diet with the aim of bringing the Steak to Australian table as it was meant to taste. The cattle are 100% free range, fully grass fed and chemical free. Allowing the cattle to grow slower, retaining the marbling of fat among the muscling and this leads to their meat being full flavoured, deeply coloured and surprisingly lean and tender – so tender you can eat it with a spoon.
A true Florentina steak uses Chianina beef, and is always served rare. The steak are enormous and designed to be shared – one steak serves two to three people.
