Gastronomy "Bistecca alla Fiorentina"

One of the world’s oldest and largest cattle breeds, the majestic, porcelain-white Chianina (pronounced key-a-knee-na), take their name from the Val de Chiana, a central Italian valley region near Arezzo and Siena in Tuscany.

The eponymous Florentine classic ‘Bistecca alla Fiorentina’ is traditionally produced from their meat, and it is the specific taste profile – fully grass fed and benefitting from our 100% free range and chemical free ethos – that we aim to bring to the Queensland palate: a table meat, from a herd bred in South Gippsland, Victoria, presenting just as it was traditionally meant to taste.

Without a doubt the most famous dish in regards to the Chianina Beef is "Bistecca alla Fiorentina" otherwise known as The Florentine Steak. The Florentines consider this to be one of the highest expressions of Tuscan gastronomical achievement.

 

Florentine Italian Grill and Wine Room has re-defined Steak dining in Brisbane, delighting all steak lovers with a variety of dishes and beef cuts and is the only restaurant in Queensland to provide an exclusive world-class Chianina beef.  Chianina Beef, now sourced and grown by Australia's esteemed breeder and producer Sam Walker at Isola Chianina Farm in South Gippsland, Victoria. Florentine Italian Grill is in fact the only Steak Restaurant in Australia that purchases the whole body of Chianina so that there is absolutely no waste and that we keep the same integrity with the breed, just as it is done in Tuscany.

 

Isola Chianina herd of Chianina cattle is clearly outlined with age, size and diet with the aim of bringing the famous Florentine Steak to the Australian table as it was meant to taste. This breed of cattle is 100% grass fed, grain and chemical free and are free to roam.  This allows the cattle to grow slower, retaining the fat among the muscling and this leads to their meat being lean, deep rich red colouring and full flavoured.

 

Authentically a traditional Bistecca alla Florentina is made with the large Porterhouse / T-Bone cut of the Chianina.  Our steaks are enormous weighting in from 1kg to 1.5kg, we also prepare a Rib on the Bone between 800g to 1kg which are designed as a shared dish – one Florentine Steak can be shared amongst 2 to 4 people and is served on a hot Italian soapstone with Tuscan Potatoes and your choice of Jus.
